Upgraded to premium and lost some settings. Can't shoot flats

Question

Canon 70d

Had free trial version, shooting flats worked great. Used the drop down menu to adjust shutter speed to get a 50% histogram. I have since upgraded to the premium edition and now I have only three settings: Bulb, Program, and AV-Flat. No more individual settings.

AV-Flat is all automatic and I only get about 20% across the histogram with the brightest light setting I can come up with (T-shirt and computer screen). Program is probably the way to go, but with the camera connected, I can't adjust the shutter speed. Am I supposed to disconnect, adjust, reconnect, shoot, read histogram and repeat until I get it right?

What is the proper way to shoot flats using this program?

You may need to clear the BYE Cache:  Settings; Advanced; "Delete Cache Data".

Then CLOSE and RESTART the BYE program.

BYE will re-enumerate the Capabilities of your 70D, and all your Exposure Capabilities should be available again.
