Thanks for the input.  I'll have to take a look through some of my books - I had recalled that there was one (J. Lodriguss?) on DSLRs that recommended RAW but also setting camera to monochrome.

Setting the color style is irrelevant when taking RAW images.

Jerry,

 

I am without a camera at the moment so I can't verify the exact option, but in the camera's menus there is an option to "style" a JPG image as black and white. However, if you are capturing RAW data such an option is not used because the whole idea of a RAW image is for it to be largely unprocessed in the camera. 

 

Whatever software you use for image processing there is probably an option to convert from RGB colorspace to luminance. This is the best option.

On the camera, press MENU then navigate to this menu:

Move down to Picture Style and press SET. Scroll down the next screen until you get to monochrome and press SET.

However, as Astroman said, if you're shooting in RAW mode, this won't make a difference. You'll need to convert to monochrome in post processing.  In GIMP and photoshop this is achieved  with Image...Mode...Greyscale
